Seared Pork Chop with Rasin Chutney
· 4 Pork chops, patted dry and seasoned with salt and pepper
· 2 cups raisins
· oil
· 4 cloves garlic, chopped
· ¼ cup red wine vinegar
· 1 tsp dried basil
· ½ tsp nutmeg
· 1/8 cup fruit juice or water
· ¼ cup sugar
Directions: In a small sauce pot on medium heat, add a little oil and cook off garlic lightly till just starting to turn brown. Add in raisins, vinegar, spices and fruit juice. Bring to a light boil and allow to cook till raisins are plump and half of the liquid is gone from the pan. Add sugar and continue to cook till the liquid is a syrup consistency, adjust flavor with salt and pepper, and set aside.
Heat a large flat bottomed pan with a little oil in the bottom till the oil just barley starts to smoke. CAREFULLY lay your seasoned pork chops in the pan, make sure not to over crowd. Allow to sear until golden brown on both sides. Finish in oven as needed.
