Citrus Quinoa Salad
1 cup quinoa cooked and cooled
1 head broccoli, florets removed and stem grated
1 cup grapes, halved
2 carrots, grated
1 bunch green onions, greens finely chopped, whites reserved with roots removed
2 lemons, zested and juiced
3 oranges, zested and juiced
1 finger sized piece of ginger, grated
2 clove garlic
Olive oil, half the amount of combined orange and lemon juice
¼ cup walnuts, toasted
1 Tbls. Honey
Salt and pepper to taste
Directions: In a blender, combine citrus juices and zest, onion whites, ginger, garlic, walnuts, honey and oil. Pulse till well combined and adjust seasoning. In a large bowl, combine quinoa, broccoli, grapes, carrots, and onion greens with dressing and mix thoroughly. Allow to set in refrigerator for at least a half hour.
