Citrus and Ginger Chicken Breast with Orange and Grapefruit

4 chicken breasts

1 large lemon, sliced

2 orange, one sliced and one segmented

1 grapefruit, segmented

1 Tbls. Fresh basil, chopped

1 finger of ginger, grated

2 tsp oil, split

Directions: Pre heat oven to 350 degrees, pre-heat grill. Toss chicken breasts in 1 tsp oil, ginger, salt and pepper and allow to marinate for at least an hour.  Grill chicken breasts till they release off the grates easily and you have nice grill marks. You do not need to fully cook at this point, just get some grill marks on them. Place on a cookie tray or in a casserole dish, alternate lemon and orange slices on top of the chicken and place in oven. Cook till internal temperature reaches 165 degrees, about 20-30 min. you can use your ovens broiler as well if you want the citrus to get a little color, adding more flavor.

In a small bowl, combine orange segments, grapefruit segments, basil, oil, salt and pepper.

Remove citrus slices, discard or use for plate presentation. Top chicken with basil mixture and serve.
