Chocolate and Peppermint Iced Beet Cookies

1 can sliced beets with juice, pureed

1 cup oatmeal

3/4 cup flour

1 egg

2 apples diced

½ cup maple syrup

1 can cream of coconut

½ cup sugar split

1 cup peppermint hot chocolate mix

Directions: in a large bowl mix beet puree, apples, oatmeal, flour, maple syrup, ¼ cup sugar and egg. Mix thoroughly till well combined. Spoon out onto a lightly greased baking sheet and bake at 350 degrees for 15 minutes.

For the icing: in a small sauce pan heat up cream of coconut and whisk in hot chocolate mix and ¼ cup sugar till dissolved and simmer for 5 minutes. Top cookies with icing and enjoy
