BBQ Lentil Salad

½ Lb. dried lentils                                                    

3cups of water or stock                                                            

1 tsp. dried thyme                                                   

1Tbl. red pepper flake

 2 onion, diced                                                          

2 bell peppers, diced                                                

4 clove garlic                                                            

½ cup BBQ sauce

½ c red wine vinegar                                                 

1 can corn

1 can black eyed peas or other bean, drained    

1 tsp dried basil

½ Lb. bacon diced and cooked, fat reserved        

¼ cup oil

Directions: In a large pot, cook lentils in water with red pepper flake and thyme till desired tenderness, allow to cool. In a blender combine BBq sauce, garlic, basil, vinegar, reserved bacon fat, and oil until combined.  In a large bowl mix cooled lentils, onion, pepper, corn, beans, and dressing mix thoroughly and allow to rest in refrigerator for at least 1 hour and serve.
