Quick Sweet Potato Pancakes with Peach Crisp Topping

For pancakes:

1 can sweet potatoes including juice

1 ½ cup instant pancake mix

¼ tsp nutmeg

¼ tsp cinnamon

Directions: in a blender puree sweet potatoes and liquid till smooth (or mash sweet potatoes by hand, masher or whip), Add water to make a total of 2 ½ cups. Mix with pancake mix and seasonings till smooth, adjusting with water or more mix till smooth pourable consistency. Spoon into a preheated skillet and cook till golden brown on each side and batter is fully cooked in the middle.

 

For topping:

1 can sliced peaches, drained

¼ cup maple syrup

¼ cup old fashioned oats

Dash of cinnamon and nutmeg

Directions: In a small sauce pot heat up all ingredients to a light simmer and allow to cook for about 5 min, stirring occasionally, until oats are tender but not mushy
