Pinto bean and rice “falafel”
· 1 cup dried pinto beans
· 4 cup water or stock
· 1 medium onion, diced
· 3 clove garlic, chopped
· 1 pkg taco seasoning
· 1 cup rice, dried
· ¼ cup bread crumbs
Directions :
Wash the beans and check for any foreign material. In a large pot sauté off onion till translucent then add garlic continue to cook till fragrant. Add beans and water. Bring to a boil then reduce to a simmer. Allow to simmer till beans are tender. Add rice and seasoning packet (salt and pepper if desired), continue to cook till rice is fully cooked. Pour into a cake pan and allow to cool completely then add bread crumb. Mash with a fork, whisk, potato masher or hands. Form into patties and sear in a preheated electric skillet or sauté pan till golden brown on both sides. Serve with chimichurri
