Cabbage Slaw with Kale Pesto Vinegarette

2 qt. shredded cabbage

1 carrot, shredded

3 pears, shredded

1 can corn, drained

1 can beets, drained and slivered

½ cup kale pesto

½ cup red wine vinegar

salt and pepper to taste

Directions: Mix kale pesto and vinegar thoroughly. In a large bowl toss all ingredients together. Refrigerate for at least 1 hour
